Creamy Baked Asparagus

Looking for an easy, delicious recipe for asparagus? This is it!! Super simple & ready in about 30 minutes... Perfect side dish for your grilled summer meats too!
Ingredients:
1 1⁄2 pounds fresh asparagus, trimmed
Kosher salt & Black pepper
1⁄2 teaspoon garlic powder
1⁄2 cup light mayonnaise
1⁄4 cup light sour cream or plain Greek yogurt
1⁄2 cup grated or shaved Parmesan cheese
1⁄2 teaspoon paprika
Equipment:
13 x 9 baking pan
Cutting board & chef knife
Measuring spoons & cups
Rubber spatula
Olive oil spray
Bent edged spatula for serving
I love asparagus season & the sweet flavor of fresh asparagus! I grow a few plants in by garden and can often be found hunting wild asparagus along fences out in the country too. Fresh grown asparagus is so different from the veggie you buy in the store. Store bought often has a tough stem which can be lightly peeled and trimmed ... Garden grown can be eaten right down to the cut end... it’s that tender. Whichever you have will work well in this recipe... Let’s get cooking!!
To start...
Preheat oven to 350 F.
Wash and pat asparagus dry with a dish towel.
Trim thick ends of stalks to even lengths and to fit in pan. If stems are tough, use a
vegetable peeler to lightly scrape the skin off. Generally, very fresh asparagus stalks will be quite tender. I usually bite a little off and check.
Time to pan & bake...
Place dried stalks into a 13 x 9 baking pan that has been lightly sprayed with olive oil.
Spread to cover pan and level stalks. Sprinkle asparagus with a little kosher salt and a
few grinds of fresh black pepper. Evenly sprinkle garlic powder over pan and gently toss
to coat all asparagus stems.
Combine mayonnaise and sour cream in a small bowl. Using a rubber spatula, spread
evenly over pan of asparagus, leaving tips exposed.
Add parmesan cheese over creamy topping and sprinkle with paprika... Paprika adds
color and meal appeal!!
Bake in 350 F oven for 20-25 minutes and cheese is melted and golden. Asparagus should still be bright green too.
Dinner is READY!!
