Need dinner in less than an hour? These meatballs are no fuss and super easy to make… baked in the oven too! Serve over pasta and dinner will be amazing in minutes!

Meatballs in Minutes

Yield: 15 – 16 meatballs

 

Ingredients:

  • 1 pound ground turkey or lean beef

  • 1 small onion, finely chopped

  • 1 egg

  • ¾ cup seasoned bread crumbs

  • 2 tablespoons tomato sauce

  • ½ teaspoon Italian seasoning

  • ½ teaspoon garlic powder

  • ¼ teaspoon black pepper

  • ½ teaspoon kosher salt

  • Olive oil or vegetable spray

 

Equipment Needed:

  • Cutting board

  • Chef knife

  • Medium mixing bowl

  • Half baking sheet

  • Aluminum foil

  • Bent edged spatula

Make these meatballs in no time at all!  My mother used to make these meatballs when I was growing up and I remember helping her roll the meatballs and placing them on the baking pan. Such an easy way to make them and they are baked too! No standing over a hot fry pan with splattering grease! My favorite way to serve them is with marinara sauce over pasta or in a meatball sandwich with melted cheese... either way dinner is ready in minutes! Gather the ingredients and let’s get rolling!

Preheat oven to 375 F.

 This recipe is literally four steps! Make the meat mixture, roll the balls, bake and eat… super easy!

Begin by finely chopping the onions into small pieces. No one wants huge chunks of onion in their meatballs. You should have about ½ cup of onions in your pound of meat. I often used ground turkey to make a lower fat meatball, but ground round or chuck work great too! Combine the ground meat, bread crumbs, egg and seasonings in a medium mixing bowl and combine well. Use your hands… clean of course. Easier to work all the dry ingredients evenly using your hands, until the mixture is smooth. Something therapeutic about the process!

Prep a half sheet pan by covering it with foil first. This helps reduce the clean up and mess. Drizzle a small amount of olive oil on the sheet pan and spread to coat the surface. A vegetable spray works well too!

Now the fun begins! Roll each meatball into 1½ inch sized balls, similar to a golf ball. Make sure they are relatively even in size so they cook at the same rate. This is where you can get your children involved in the fun too… have a rolling party! Arrange the meatballs on the prepped pan, placing them about an inch apart to allow heat to surround them during baking. You should get around 15 meatballs total.

Place tray of meatball in preheated 375 F oven on the middle rack and bake for 25 minutes. Your meatballs will be lightly browned and cooked through. If you’re unsure of doneness, cut the largest on open and check the middle. Cooks’ bonus too, as you get to taste them too!

While the meatballs are cooking, you can make my easy Homemade Marinara Sauce or open a jar of you favorite pasta sauce. Cook up a pound of spaghetti… dinner is served in minutes! Enjoy!
