Smoked Oven Roasted Potatoes
I love oven roasted potatoes not just for the flavor, but the convenience in preparation. I make them, put them in the oven & wait .... easy right? They are also the perfect side dish for so many dishes, especially grilled meats!
Smokey Roasted Potatoes
Yield: 4 servings
Ingredients:
4 medium (~ 4 inch long) Russet or 8-10 small Yukon gold potatoes, cut into 1 1/2 - 2 inch chunks
1 yellow onion, thinly sliced
3 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/8 teaspoon black pepper
Equipment needed:
Chef knife
Cutting board
Measuring spoons
Small bowl
13 x 9 baking pan or half sheet pan (or 8 x 8 inch pan if making a half recipe for 2)
Bent-edged spatula
Oven roasting is all the new craze! Maintains the nutritional value using dry heat vs fried potato options, which add a tremendous amount of mystery fat. This recipe is so good as a side dish to substitute for french fries. I often serve them along side burgers, baked chicken breasts or grilled chicken or fish, to name a few.
Preheat oven to 400 F
Begin by pouring olive oil on bottom of preferred pan. Scatter potatoes over pan. Add slices of onion and add to top of potatoes. Using you hands, gently toss potatoes and onions until evenly coated.
Mix all dry ingredients together in a small bowl. Sprinkle seasoning mixture evenly over potato/ onion pan. Again using your hands, toss together until potatoes are covered and mixture is orange in color as pictured above. Place pan in preheated 400 F oven and bake for 15 minutes. Using a bent edged spatula, turn potatoes over to allow even heat distribution and browning. Return to oven for 20 more minutes or until potatoes are cooked through and crispy brown.
Dinner is ready!! My favorite entree to serve with these potatoes are my Easy Homemade Chicken Strips. When grilling season is here… these potatoes can be panned and cooked on the grill too! Serve with your favorite green vegetable… ENJOY!!
