When I was in college I worked at an Italian restaurant called Manzullo’s. They had the best food served in a family atmosphere. Always super busy, only opened on weekends and they had this one dish I always wanted to recreate. it was a giant bowl of pasta covered in toppings and cheese. Decided to make it more pizza style, than just a bowl of pasta. My hubby almost likes it almost better than regular pizza, as the crust is amazing! I hope you agree and give it a try!!
Preheat oven to 400 F.
First step is to make the crust…
1) In a medium mixing bowl, combine cold, cooked spaghetti, milk, beaten eggs, salt, garlic powder and ½ cup mozzarella and Parmesan. Mix well to blend and have spaghetti well coated with all ingredients.
2) Grease a spring form pan with olive oil and press pasta mixture into pan. Bake for 15 minutes in preheated 400 F oven.
Next is the pizza construction….
3) Reduce oven temperature to 375 F. If using a spring form pan, I would recommend lining the bottom with foil to catch leaks.
4) Sprinkle 1 cup of shredded mozzarella on top of baked crust and gently press into spaghetti.
5) Pour seasoned pizza sauce on top of baked crust and spread to evenly coat.
6) Add desired toppings on top of sauce… starting with onions and veggies, then meat on top.
7) End with final cup of shredded cheese on top of toppings. Sprinkle with a little parmesan and Italian seasoning for color.
8) Bake in 350 F oven for 25 – 30 minutes or until cheese is golden and pizza is bubbly.
Your Spigizza is ready!! Golden and bubbly… YUM!! Cut into wedges and garnish with parmesan cheese and red pepper flakes… ENJOY!!
