These easy, yummy cookies are sure to be fantastic for your sprinkle loving family! Super easy too... using a cake mix and only five additional ingredients. Lower in fat and a perfect treat for birthday parties or after school snacks too!
Funfetti Cookies
Yield: 24 – 30 cookies
Ingredients:
1 box Funfetti cake mix
2 large eggs
1/2 cup Greek plain nonfat yogurt
1 teaspoon vanilla
1 teaspoon baking powder
1/3 cup assorted colored sprinkles
Extra sprinkles for cookie topping
Equipment needed:
Medium mixing bowl
Dry measuring cups
Measuring spoons
Rubber spatula or wire whisk
Half baking sheet pans
Silicone baking liners or parchment paper
Small cookie dough dipper or two tablespoons
Bent edged spatula
Cooling racks
My granddaughters love sprinkles and Funfetti cake! I have made many varieties of cookies using cake mixes, so decided I would try Funfetti! Cookies. Whenever I get together with my granddaughters… we bake. Cookies are always our favorite treats too... Easy, as they don’t requirea lot of measuring and guaranteed to turn out yummy! Perfect cookies for our tea parties too! Grab your cake mix and let’s bake!!
Preheat oven to 375 F.
Cookies are a baked good that usually require a larger proportion of fat and less moisture than most other baked goods. Baked goods often are loaded with fat and consequently don’t make a very nutritious snack. Often, I substitute applesauce for fat in cakes, but in cookies and muffins I use Greek yogurt. Moistens and adds protein, but not extra fat or moisture. Too much moisture in cookie dough creates a runny dough and a thin, soft cookie that falls apart easily. Greek yogurt adds protein and texture to the dough, which helps to hold it together. Placing the liquid ingredients in the bottom of the bowl makes mixing easier and more efficient. So, combine the eggs, yogurt and vanilla together in a medium sized mixing bowl. Blend well.
Next combine the dry ingredients, cake mix, baking powder and extra sprinkles together in a separate bowl. Then add them to the liquids... Sure, there are sprinkles in the cake mix, but adding a few extra makes the cookies more FUN!! Blend together well, until just mixed together. Don’t be tempted to over mix!
Finally, time to pan and bake! Line the sheet pans with parchment paper or silicone pan liners to prevent the cookies from over browning and burning. I usually use a small 1 1/2 tablespoon dipper (ice cream scoop) when I scoop cookies to make them as uniform as possible = Even baking! If you don’t have a small dipper, use two tablespoons from your flatware set to scoop and push off the dough onto the baking pans, trying to make them as even as possible. Pan cookies about 2 inches apart... 3 – 4 across and 4 – 5 down. About 15 – 18 cookies per pan. Lightly press balls with your fingers and sprinkle with a few additional sprinkles. Place on middle rack of a preheated 375 F oven. Bake for 9 – 10 minutes.
**Cookies should be white with little browning for best meal appeal. Allow cookies to set on warm pan for 10 minutes before attempting to move to a cooling rack. Cookies will be soft until they cool so resting helps to prevent breakage.
Using a bent edged spatula, carefully remove cookies to a cooling rack until totally cool before bagging.
Don’t they look so pretty and scream PARTY TIME!! Go ahead and try one... Taste like Funfetti Cake, but less mess and no plate needed!! ENJOY!!
**To store cookies, place in a container with lid partially open. This will prevent cookies from becoming gooey and sticking together.
