Simple Baked Salmon with Lemon
Yield: 4 servings
Ingredients:
1 – 1 1⁄2 pound fresh salmon fillet
Olive oil or spray for pan
2 tablespoons olive oil
3/4 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 fresh lemons, 1 whole & 1 thinly sliced
Equipment needed:
Half - sheet pan
Aluminum foil
Citrus juicer
Measuring spoons
Silicone brush
Bent-edged spatula
When I come home craving salmon and do not want to spend all night cooking... this is what I usually prepare. Super simple, yet soooo yummy! If the weather is nice out, instead of baking, I might even throw it on the grill too. My hubby, who’s not a “fish lover”, like I am... even enjoys it! The lemon and garlic are the ideal combination to satisfy your taste buds. Savory with a bit of zest! Six ingredients are all you need... so lets grab them and start cooking!
Preheat oven to 400 F.
Did I say this recipe is super simple? Literally five steps...pan, oil, season, juice and cook! So, to start take your half sheet pan and cover it with aluminum foil to reduce the cleanup. Drizzle a little olive oil or lightly spray the pan surface and place the fillet in the center at an angle to fit. Usually a fish fillet will be thinner by the tail end, so fold the end under to equalize the thickness... as well as help the fillet fit a bit better too. Folding will prevent the thinner end from overcooking as well. Pour the 2 tablespoons of olive oil over the entire fillet and spread well using your fingers... or a silicone brush.
Last steps... seasoning and juicing! Mix the garlic powder, salt and pepper together and sprinkle evenly over the fillet surface. Cut one lemon into 7 or 8 thin slices and use the other for juicing the fillet. Cut the second lemon in half. Use a citrus juicer to squeeze the juice over the salmon fillet too. If using a cup-style juicer, juice the lemon halves first and then carefully pour over the fish. Place the slices of lemon evenly over the salmon dividing the fish into 4 even servings, as shown above. Place in preheated 400 F oven or on hot grill with a lid.
Bake/ grill salmon for 15 – 18 minutes or until your preferred degree of doneness, when salmon flakes in the center when pierced with a fork or firm to the touch. Some people prefer less done or a softer fish texture, like me, and others prefer a more well done, firm final product... like my husband. Either way... pure yumminess!! Remove your salmon from the pan/heat with a bent-edged spatula and serve with a fresh, colorful vegetable and perhaps rice pilaf... Enjoy!!
