Baked salmon with a sweet, savory flavor… serve it plain or garnish your fish with an amazing sweet pineapple salsa that adds the perfect amount of spice! Amazing flavors that compliment each other perfectly. Sweet and savory… my favorite combination!

Baked Salmon with Sweet ‘n Spicy Pineapple Salsa

Yield: 4 portions

 

Ingredients:

  • 1 ½ pound salmon fillet, cut into four portions (or 4 5-6 ounce fillets)

  • Olive oil

  • Kosher salt

  • Fresh ground black pepper

  • 3 tablespoons butter, melted

  • 2 cloves garlic, minced

  • 2 tablespoons honey

  • 1 teaspoon oregano

  • Garnish: Fresh parsley or pineapple salsa

 

Sweet ‘n Spicy Pineapple Salsa

  • 1 20-ounce can Pineapple tidbits, drained & chopped

  • 1 large Roma tomato, diced

  • ½ cup red onion, finely diced

  • 2-3 small gourmet red & orange sweet peppers

  • 1 jalapeño pepper, seeded & finely chopped

  • 1 clove garlic, minced

  • ¼ cup fresh cilantro, chopped

  • ½ teaspoon ground coriander

  • 1 teaspoon ground cumin

  • ½ teaspoon kosher salt

  • 2 tablespoons lime juice

  • Optional: dash nor two cayenne pepper


 

Equipment Needed:

  • Cutting board

  • Chef knife

  • Measuring spoons

  • Small microwave-safe bowl

  • Small spoon

  • Half sheet baking pan

  • Aluminum foil

  • Medium mixing bowl

  • Small strainer

 

I love salmon and often don’t feel like grilling outside in cold weather. My hubby is not fond of fish, but if I add a sauce or topping he complains less. He really enjoyed salmon prepared this way! This recipe is super easy and is also ready in less than 30 minutes. I often like my salmon with a light savory seasoning. Here you have the option of salmon with or without the salsa topping too. Preheat your oven and let’s cook!

Preheat oven to 350 F.

I hate it when I’m super busy and start making dinner late. Salmon, or any fish, doesn’t take long to cook and thaws quickly too. Often my go to food when I forget to plan ahead. Like I said earlier, this recipe is ready in about 30 minutes and so flavor packed. (The salsa should be made ahead for best flavor.) Start the cooking process with making the savory, sweet sauce. Place the butter and garlic in a small microwave-safe bowl and heat on high for 20 -25 seconds, or until melted. Add the honey and oregano and stir well with a small spoon. While the butter is melting, cover a half sheet baking pan with foil and drizzle lightly with olive oil.

Arrange salmon fillets close together, skin side down, on the prepped foil. Foil will help eliminate soaking and scrubbing a pan after dinner as the honey makes a sticky mess. Good but messy! Sprinkle fillets with kosher salt and a few grinds of black pepper. Carefully pour or spoon butter mixture evenly over fillets to coat. Fold foil in toward the fish a bit to prevent extra spreading of sauce, as shown. Place pan in preheated 350 F oven on center rack for 15 minutes. Change heat source to broil and broil for a additional 3 – 5 minutes or until fish is lightly browned and bubbly.

Dinner is ready! Plate salmon on your plate, add dollop a generous spoonful of salsa and serve with your favorite vegetable or rice dish! Isn’t it pretty and the aroma is heavenly… enjoy

This salsa is soooo good! I tried it once over pork tenderloin and thought it would be fabulous on fish too! My hubby is not keen on fish, so if I dress it up he’s more apt to sort of enjoy it. Gives the salmon just the right flavor and the color/ meal appeal is to die for! I know I’m excited, but this dish really did turn out so good. I think my hubby will eat it again. Try it with mango instead of pineapple for a little different flair. Super simple too!

Just like I said… this recipe can’t get any easier! After you prep and chop all the ingredients, as shown above. Just combine them in a medium mixing bowl and stir well. Pour over the lime juice and sprinkle the seasonings over the mixture. If you desire a bit more heat, add a dash or so of cayenne pepper. Sweet with a kick!
