Nothing like two weeks in the Yucatan peninsula to eat, drink and make some great memories! Take a mini vacation with me and view the highlights, yummy food, drink... and the FUN!
Vacation right? So to start each day, two things were mandatory... coffee for the sunrise walk on the beach and a mimosa poolside! Best way to relax and get the day off to a great start. Breakfast was always a treat as well!
Breakfast in Mexico always has a certain flair. Beans, eggs, salsa, fruit, peppers... to name a few. I love all the fresh fruit available and the fact that there are always vegetables available too! Yes, you heard right... veggies for breakfast. Sometimes sautéed carrots or mixed with squash, peppers... Poblano-style or mixed grilled were always a treat! Think my favorite mornings involved eggs over refried beans... garnished with guacamole and salsa... with a plate of fruit on the side.
Who goes inside to eat lunch or snacks? Beachside or poolside food were always the best! Chips, Pico De Gallo with guacamole or ceviche were my go to choices. Think I'm having guacamole withdrawal!
When on vacation for two weeks, I try to monitor my calorie intake. Alcohol and eating out do add up! I try to remember moderation... but not always possible... right? I often had a salad, with so many colorful choices they were always so wonderful. Didn’t feel like deprivation at all! Pile up the plate and head back to the pool. One day we had a taco bar for afternoon poolside appetizers... with margaritas of course☺!
Gotta love Mexico... as at 11 a.m. there were cocktail making lessons every few days! 5 o’clock somewhere, right? One concoction was Electric Lemonade... perfect green beverage for St. Patty’s day! Another one I can’t remember the name of, but was layered and so fun to make... like a fancy Tequilla Sunrise! Of course we had many margarita versions... my favorite being my Skinny Golden version. I developed a love for Chocolate Martinis too! So fancy and an easy way to satisfy the desire for chocolate. Should do a cocktail post sometime, No?
Dinner was always an adventure! Be it buffet selections or a private restaurant, they were spectacular! My go to selections always revolve around my love for seafood or fish. Of course, when in Mexico do as the Mexicans do. So in the area of food I ask for an authentic dishes whenever possible. Was served fish in the most amazing ways, such as Tikinxic-style Red Snapper, seasoned to perfection. My hubby is a steak lover, so he also indulged in Surf ‘n Turf a few times too. Tenderloin so tender you didn’t need a knife! Couldn’t decide what to have one night so had two entrées ...Stuffed Calamari and Grilled Salmon. Another night... Grouper! My all-time favorite dish was the Chiliean Sea Bass... both the Italian and Mexican styles. Tender and so flavorful! I find Mexican desserts not as sweet and flavorful as desserts in the US, so fortunately didn't have many of those! My hubby’s chocolate birthday cake on the last day was the best!
All in all, the trip was great and so relaxing! A few more pics from our time in Mexico... Enjoy!!!
