Cheesy Roasted Cauliflower
Seasoned roasted cauliflower with melted cheeses...a gooey delight! Super simple way to make a vegetable packed with flavor and nutrients to boot. Great side dish for any meat you prepare too! Add broccoli too for a little different spin on a great recipe!
Cheesy Roasted Cauliflower
Yield: 4 servings
Ingredients:
1 head fresh cauliflower (or 1 large package of florets)
or 1/2 head cauliflower & 1 head broccoli
1 1/2 tablespoons butter, melted
2 tablespoons olive oil
Juice of 1/2 fresh lemon, ~ 2 tablespoons
1/2 teaspoon kosher salt
1/8 teaspoon black pepper
Dash cayenne pepper
1/4 cup fresh grated parmesan cheese
1/2 cup shredded sharp cheddar cheese, preferably reduced fat
Equipment needed:
Cutting board
Chef knife
Small mixing bowl
Citrus juicer
Measuring spoons
Dry measuring cups
Half sheet baking pan
I love cauliflower and broccoli, but tire of it just steamed with grated cheese. My hubby loves cauliflower with cheese sauce, so decided to experiment with combining a few recipes I found online and reduce the fat a bit. Adding cheese helps with meal appeal too, especially when serving with baked chicken or grilled meats. Who doesn’t love a little cheese on their cauliflower or broccoli? Grab your baking pan and let’s get cooking!
Preheat oven to 400 F.
The first few steps are to get all the ingredients ready. Begin by cutting the veggies off of the stem and slicing into smaller segments. Some florets may be too small to slice, so just cutting them in half will work. Pieces should be relatively close in thickness to allow even roasting. Meanwhile, melt butter in a small bowl and add olive oil. Juice lemon half right into the buttery combo and stir well. Sprinkle in the salt, black and cayenne peppers and combine well. Your pre- preparation is done!
Now grab the half baking sheet and spread the cauliflower out evenly. Pour the buttery, lemon mixture over the top and toss well with your hands until every piece is shiny and coated. Sprinkle each of the grated cheeses evenly on top of the cauliflower as shown above. Place pan onto the center rack of a preheated 400 F oven.
Roast the cauliflower for 25 – 30 minutes or until florets begin to brown and cheeses are melted and golden brown too! The aroma of the melting parmesan is to die for... so pretty too don’t eat the whole pan yourself! Can be served as a vegetarian entrée too! Serve with a tossed salad or my Mixed Green Salad with Mustard Vinaigrette and your favorite baked or grilled meat... Enjoy!
