Egg In A Hole… with a twist

Egg in a hole

Yield: 2 servings… or one hungry eater

Ingredients:

  • Two slices bread.. any type will work

  • Two eggs

  • Butter, softened

  • Salt and pepper

 

Equipment needed:

  • Small skillet

  • Butter knife

  • Shot glass or 2 inch diameter small glass

  • Bent edged spatula

 

My father used to make this breakfast on many a Saturday morning growing up! This particular creation all started when my daughter in law gave me a loaf of bread from an artisan bakery, Olive and Cream Cheese Bread. She mentioned that she thought it would make great egg in a hole and she was right! My husband loves olives and the combination of these and cream cheese has a great flavor too. Making this dish uses staple ingredients you have at home too! Use unusual bread or plain old wheat, soon a creation is born!

I used a whole loaf, so I started by slicing my bread a bit thicker, about an inch, to allow plenty of room to hold the egg. Pre-sliced bread works fine too, but might want to create a larger hole in the bread for egg spreading. Next, spread softened butter lightly on both sides of each slice. Too much butter might cause bread to become soggy, so use sparingly.

Next step is to create the “hole”! Using a shot glass or in my case a small wine tasting glass, place glass in center of bread. Press and twist carefully. Lift glass and remove circle of bread. Set this aside for later. I have used small cookie cutters for holidays too… kids love the shapes!

You are ready to cook! So far hasn't this been so easy? Now set the skillet on medium high heat for 2 – 3 minutes to warm up. Place a small pat of butter in center and allow to melt until bubbly. Place buttered bread on butter and toast for about 2 minutes or slightly golden brown in color. Flip bread over, using a bent edged spatula, to other side. Carefully crack egg on the counter to break shell and open in half over hole in egg. Place in center of hole. I recommend cracking egg on counter rather than a side of the bowl as it is less apt to leave shell fragments when you open it up to remove egg. Helpful hint I learned at a cooking boot camp along the way!

Doesn't it look kind of like an egg in a nest? An alternate name for this recipe I have seen is ‘Egg in a Nest’ too! Sprinkle a little salt and a couple grinds of pepper on top for seasoning, then allow egg to cook in skillet on medium heat for about 2 minutes or egg seems set. Cooking time will vary depending on how done you like your fried eggs. Carefully flip toast and egg over to other side without breaking yolk. Continue to cook for another minute or two. The egg is meant to be slightly runny so you can dip the bread in the yolk you take each bite! If your not a runny yolk kind of person… fry a bit longer. Remove completed egg in a holes from skillet and place center circles in pan to toast. This step can also be done as you pan fry the dish, provided your skillet has room too.

Plating the dish will give it extra meal appeal too! Place the toasted bread circle on top of egg in a hole… garnish with colorful fruit, tomatoes or herbs… breakfast is served! Enjoy!
