Simple Sautéed Kale... with a kick

Want an easy side dish sure to please your taste buds? Sauté up this batch of greens and you won’t be disappointed... savory with a kick! My garden has kale growing all summer and it also is available at most grocery stores... I consider kale to be a super food too!

Simple Sautéed Kale... with a kick

Yield: 4 servings

Ingredients:

  • 6 – 8 cups kale (~1 1⁄2 pounds), ribs removed, coarsely chopped or torn
  • 1 medium onion, chopped
  • 2 – 3 cloves garlic, minced
  • 2 – 3 tablespoons olive oil
  • 1/2 cup chicken or vegetable broth
  • 1 1/2 tablespoons red wine vinegar
  • 1/8 teaspoon red pepper flakes
  • Salt and pepper to taste

Kale is one of the most misunderstood vegetables! Kale is king when it comes to its nutritional benefits. Kale is one of the most nutrient dense foods on the planet... full of Vitamin A, K, C, and antioxidants... to name a few. It is a bit more fibrous than most greens and has a strong flavor, but add great ingredients and this veggie shines. Cooked or raw... it’s fabulous and so good for you too! It takes quite a bit of fresh kale to create a cooked side dish for your family, due to shrinkage and moisture loss. I love kale and add it to many dishes too! Get your skillet out and let’s cook!

First steps are to chop the onion and mince the garlic... then prep the kale! Using a paring knife or your fingers, carefully remove the ribs from each leaf and chop each leaf in half or thirds depending on the size of the leaf. The ribs of each leaf are the fibrous part that doesn’t cook down, so removal is important. Set kale aside as you prep the other ingredients.

Start the cooking process by setting a large skillet over medium-high heat for 2 – 3 minutes with 2 – 3 tablespoons of olive oil. Sauté onion and garlic for 3 – 4 minutes or bright yellow and softened.

Add the chopped kale the skillet next. Don’t be afraid if seems like a lot in the pan... it will shrink down! Stir kale and aromatic veggies together and pour the broth over on top. The broth will steam a bit, as well as add flavor to the dish. Sauté for about 4 – 5 minutes. Kale will brighten to a wonderful shade of green as it cooks too, and shrink quite a bit... smells heavenly too!

Last step is to add the red wine vinegar, red pepper flakes, salt and pepper. Pour, sprinkle, taste and stir... the result will be wonderful! Adjust the spicy red pepper to taste... I always like a bit more, my husband less. You can always add more as a garnish or at the table too!

Here it is … a great side dish for your meat and potatoes or by itself! Sprinkle with a bit of Parmesan cheese… Enjoy!
